Street Food Recipe: How to make Pav Bhaji

One of the most popular street food's in Mumbai has now become a national favourite. Pav Bahji, an extremely simple dish, is a bunch of mixed vegetables and potatoes mashed up together with lots of butter, garlic and spices served with buttered and spiced bun. Simple.

Pav Bhaji Ingredients (Serves 4) 

4 potatoes
2 tomatoes
1 pepper
50g butter
2 tbsp Pav Bhaji Masala
4 white burger buns
1 lemon
1 onion
1 tsp garlic paste
Fresh coriander leaves
Salt to taste

How to make Pav Bhaji 

The Bhaji (mashed vegetable mix)

Heat up a shallow pan with 2 table spoons of butter.
Fry finely chopped onions and garlic paste till they turn golden.
Add the finely chopped peppers and tomato and cook it for about 5 - 7 mins.
Then add the Pav Bhaji Masala and salt and cook it in low heat with a lid to steam cook it.
Then add the potato mash and mix the whole paste together and sprinkle some water.
Let it cook for some more time on medium heat.
Add the lemon juice and sprinkle the fresh coriander leaves on top.
Then add the rest of the butter on top and let it melt in the heat of the bhaji.
The Pav (buttered buns) 
Slice the buns from the centre.
Heat some butter in a pan and then fry the buns in that butter.
Sprinkle a pinch of Pav Bhaji Masala on the buns.
 To serve, top the buns with the bhaji with some chopped onions and fresh green chillies.
